Anhua Fu Zhuan is grown on purpose to bloom mold. Speckled through the brick are the golden flowers, colonies of a fungus called Eurotium cristatum, encouraged because they turn the leaf sweet and mellow. Coarse stems are pressed in too, opening air pockets for the flowers to spread. Made in the dog days of summer for the old border trade, it brews smooth and earthy: mushroom, wet hay, a clean mineral close.
